Instructions
- Heat the oven to 220°C (200°C fan) / 425°F. Line a large rimmed baking tray — the rim matters, the chicken gives off juice.
- Toss the potatoes and carrots with 2 tbsp of the olive oil, half the paprika, garlic, salt and pepper. Spread in a single layer and roast for 15 minutes.
- Meanwhile rub the chicken thighs and onion wedges with the remaining oil and spices.
- Add the chicken and onion to the tray in a single layer, nestling the chicken between the vegetables.
- Roast 20–25 minutes more, until the chicken is cooked through (74°C / 165°F) and the potatoes are tender and edged with colour.
- Rest 5 minutes, then finish with the lemon juice and parsley and serve straight from the tray.
Substitutions
- Chicken breast instead? Works — use whole breasts, add them for the last 20 minutes only, and check the temperature; breast dries out where thighs forgive.
- Swap the vegetables? Sweet potato for carrot, parsnips for potato, courgette added for only the last 10 minutes. Keep total vegetable weight near 900 g so the tray is not crowded.
- Air fryer version? 200°C, potatoes and carrots 10 minutes, add chicken and onion for 12–15 minutes more, shaking once. Work in two batches rather than crowding.
- Make it spicy? Add 1 tsp chilli flakes to the rub and serve with a yoghurt drizzle — the tray juices plus yoghurt is a free sauce.
