Professional Career
After graduating from Trinity College, he went to the French Culinary Institute (FCI), which is currently known as the International Culinary Center. While he was training, he did a number of jobs in different restaurants in New York and Japan. In US, he worked at the Café Boulud where his idol, Alex Lee also worked.
However, Chang became dissatisfied with the fine dining scene. In 2004, he opened his first restaurant, Momofuku Noodle Bar in the East Village. From his website, we learn that Momofuku means “lucky peach”.
His second restaurant, Momofuku Ssäm Bar, was opened in August 2006, a few blocks away from the first restaurant. It received good reviews from The Infantuation, a New York-based website that rates restaurants. His third restaurant, Momofuku Ko, a 12-seat restaurant opened in March 2008. The restaurant is really exclusive; reservations are made ten days in advance and are done online only. In October 2009, Chang published a cookbook with New York Times food writer, Peter Meehan. The book is called Momofuku.
In October 2011, he opened his first restaurant outside of USA, Momofuku Seiōbo, in Sydney, Australia. In late 2012, he opened Momofuku Toronto in Toronto, Canada.
